Talk by Professor Charles Spence on what constitutes ‘The Perfect Meal, as part of the 2015 Glasgow Science Festival.
Picnic in a summer meadow or fish and chips by the seaside: it’s not just the food which makes the perfect meal. Psychologist Professor Charles Spence has worked with top chefs including Heston Blumenthal and Ferran Adria. Listen as he shares exciting new research from the emerging field of gastrophysics and reveals how a range of factors influence our perception and enjoyment of food.
